Chicken quesadilla recipe


Quesadilla is a famous Mexican recipe. A cheese stuffed dish . Besides being delicious, it is a pack of nutrients. quesadilla  can be rougly called as cheese dude, as cheese is called as "Ques" and dude as "della" in Spanish. Fortunately We can do many varieties of this recipe by  stuffing different stuff like chicken keema, minced mutton, beef, egg, etc. We can also use beans . (if interested comment below, i will come up with different stuffing recipes) we can also use that to save time . It makes the preparation process yet more simple. Quesadilla are popularly sold at Mexican restaurant, mostly Quesadillas are served with green and red salsa. However Traditionally quesadillas are made with corn Tortillas and filled with melting homemade cheese. 



                              

 Ingredients Tortilla

2 Cups of all purpose flour
1/2 cup of milk
1/2 teaspoon of baking soda or yeast
Lukewarm water as you need

How to make tortilla

STEP  1 Take 2 cups all purpose flour, salt and baking soda in large basin, mix it well.
STEP -2 Pour milk , scramble it, then pour lukewarm water as you knead it slightly to make the dough tight.
STEP -3 cover the dough rest for 1 hour.
STEP -4 Make a medium sized ball, and roll them into Tortillas. keep aside.

Ingredients for chicken stuffing

500 gm boneless chicken
1 teaspoon of oregano
1/2 teaspoon of chilli powder
1/2 teaspoon of cumin powder
1/2 teaspoon of paprika powder
1/2teaspoon pepper powder
1 teaspoon Onion and garlic paste 
cheese as you need
salt to taste
1 teaspoon of lemon juice

 Ingredients for vegetable topping

 Each 1/2 cup Red, green, yellow bell pepper 
 1/2 teaspoon of pepper 
 salt to taste

How to make stuffing

STEP -1 Marinate the chicken with red chilli powder, oregano, pepper, onion and garlic paste ,salt. chilli sauce, and rest for 30 minutes.
STEP - 2  Roast the chickens in tawa for 15 min and keep the lid closed and make the chicken juicy in medium flame.
STEP - 3 Shred the chicken into pieces( This step is optional).
 few drops of lemon juice mix it well. 

Making of vegetable topping

In tawa, sauté onion, bell peppers (yellow, green, red)  corn, with salt and pepper for 2 to 3 minutes.

Alignment

Take one tortilla stuff  chicken, veggies and cheese on top. Fold the tortillas roast  both side until cheese melt( you can add also cream or mayonnaise, its optional)
serve it hot, serve with salsa, sauce etc

Yellow rice with chicken curry

  Yellow rice made with turmeric powder and saffron goes well with chicken curry.
