EGG FRIED RICE

Fried rice is a famous  Chinese cuisine, Very easy recipe , can also do  with the left over rice. I have made little bit  spicy and  flavorful.  Street food  style fried rice. Can be prepared within 30 minutes.



Ingredients

Basmathi rice - 240 gm (1 cup)
Egg - 2 to 3 nos( i used 2 eggs)
Beans - 1/3 cup
Carrot - 1/3 cup
Capsicum - 1/3 cup
Soy sauce - 1 tablespoon
Chilly sauce - 1/2 teaspoon
Tomatoto sauce - 1/2 teaspoon
Garam maala - 1/2 teaspoon
Chilly powder - 1/2 teaspoon
Cumin powder - 1/4  teaspoon
Salt as required
Lemon few drops( 4 to 5 drops)
Coriander to garnish
3 tablespoon of oil
Pepper - 1/4 teaspoon
 
Method
  • Cook the rice, till it's 90 %done.
  • Strain it and spread the rice on a plate to cool.
  • Chop the beans, carrot and capsicum.
  • Fine chop ginger ( 1 inch) and garlic cloves( 5 nos).
Preparation
  • Take a pan or wok and heat 1 table spoon of oil( I used peanut oil).
  • Now break eggs and sprinkle salt and pepper. 

  • Now gently scrabble the eggs.
  • Keep the eggs onto a plate and set aside.

  • Add two table spoons of oil and heat it.
  • At medium flame, add onion saute for a minute.
  • Now add the finely chopped ginger and garlic and saute.

  • Add finely chopped  carrot and beans. saute for minute.

  • Now add finely chopped capsicum, Mix it,

  • Add chilly powder, garam masala. cumin powder. continue to mix. saute for 1 min approx.

  • Add soy sauce, Tomato sauce, chilly sauce . and mix it uniformly. (chilly sauce is optional, you can also add 1 teaspoon of tomato sauce instead  of chilly sauce.)


  • Add it in the rice and mix it well.

  • Now add scrambled eggs and saute it.
  • Finally add 1/4 teaspoon of soy sauce, 1/4 teaspoon of pepper and few drops of lemon juice, mix it well.
   








 




Lastly garnish with coriander or spring onion, mix it.
Remove and serve hot.

Note - Do not overcook the vegetables, it has to be crunchy to taste good.

Moong dal dosa

Moong dal dosa Ingredients: Moong dal: 1 cup Red chilli: 2 Garlic: 1 clove Fennel seed: 1 teaspoon Tomato: small piece Salt: as required Oil: as needed Preparation Soak the moong dal in water for two hours. Grind the batter. Drain the water and grind the dal with garlic, red chili, fennel seeds, tomato, and salt. Add water to achieve a smooth batter. The consistency should be neither too thick nor too thin. Fermentation is not required. Allow it to rest for 15 minutes. Prepare the dosa. Heat a cast iron or any dosa pan, add a few drops of oil, and rub the pan with an onion slice or tissue paper. Pour a ladle of batter and spread it in a circular motion to form a thin dosa. (Dosa tawa should be medium heat). Drizzle a few drops of oil or ghee. Cook until the top is golden and crisp. If desired, add toppings such as onion, coriander leaves, and curry leaves. Serve with coconut and tomato chutney.
