Craving a quick, healthy, and utterly satisfying meal? This avocado toast recipe is your answer! Packed with fresh flavors and customizable to your liking, it’s perfect for breakfast, lunch, or a light snack.


What You'll Need:

  • Avocado: 1 ripe avocado - the heart of our dish! Look for one that yields slightly to gentle pressure.

  • Bread: 2 slices of your favorite bread. Whole wheat, sourdough, or even a thick brioche will work wonderfully.

  • Onion: 2 tablespoons of finely chopped onion. Red onion adds a nice bite, but white or yellow will do just as well.

  • Tomato: 2 tablespoons of finely chopped tomato. Choose a juicy, ripe tomato for the best flavor.

  • Fresh Coriander Leaves: A generous sprinkle of finely chopped coriander leaves (cilantro) for a burst of freshness.

  • Pepper: ½ teaspoon of freshly ground black pepper, or to taste.

  • Butter: A pat of butter for lightly toasting the bread.

  • Salt: A pinch of salt, to balance the flavors.

  • Lemon Juice: Just a few drops of fresh lemon juice to brighten the avocado mixture and prevent browning.

  • Mint Chutney (Optional): A flavorful addition if you have it on hand. Adds a lovely Indian-inspired twist.

  • Ranch Dressing: As required, for drizzling on top. Feel free to use your favorite brand or homemade.

  • Egg: 1 large egg for a protein-packed topping.

  • Cheese (Optional): A sprinkle of shredded cheese can add a creamy and savory element.

Let's Get Cooking:

  1. Prepare the Avocado Mixture: Begin by mashing the ripe avocado in a bowl. You can use a fork for a slightly chunky texture or mash it smoother for a creamier spread. Add the finely chopped onion, tomato, and coriander leaves to the mashed avocado. Season generously with pepper and salt. Drizzle in a few drops of lemon juice to keep the avocado vibrant and fresh. Mix everything together until well combined.

  2. Toast the Bread: Take two slices of bread. Spread a thin layer of butter on one side of each slice. Place them in a toaster or under a broiler until they are lightly golden and crispy.

  3. Assemble the Base: If using mint chutney, spread a thin layer onto one slice of the toasted bread. Then, generously spread the prepared avocado mixture over the same slice of bread.

  4. Cook the Egg: Now, it’s time to cook the egg. You can scramble it, fry it, or even poach it. For this recipe, scrambling it works perfectly. Heat a pan, add a little butter or oil, and scramble the egg until it’s just cooked but still slightly moist.

  5. Final Touches: Place the scrambled egg on top of the avocado-covered toast. Drizzle ranch dressing over the egg. If desired, sprinkle some shredded cheese on top as well.

  6. Toast Briefly (Optional): For a warm and melty finish, place the assembled toast under a broiler or in a toaster oven for about 2 minutes, or until the cheese is slightly melted and bubbly.
