Talappakatti Biryani | Dindukal Talapakatti Vegetable biriyani

 Talappakatti Veg Biryani -  Talapakatti veg biriyani  which is most favorite food for vegan. 


Ingredients

Jeeraga samba rice - 2 cup (measurement cup 250 gm) 
Shallot - 15
Tomato - 1 medium sized
Coriander leaves - 1 cup chopped
Mint leaves - 3/4 cup chopped
Chilli powder - 1 teaspoon
Coriander powder - 1 teaspoon
Vegetables - 1.5 cup ( Carrot, Peas, Cauliflower, Beans)
Ginger - 2 inch 
Garlic - 6 pulse
Green chlli - 3
Curd - half cup (100 ml)
Lemon - half
Peanut oil - 100 ml
Ghee - 2 teaspoon

Ingredients for Biriyani powder

Cinnamon - 1 inch
Cardamom - 5
Cloves - 5
Nutmeg - 1/4 
Bay leaves - 1
Star anise - 1

Instruction

STEP 1 Grind Cinnamon, Cardamom, Cloves, Nutmeg, Bay leaves, Star anise  into a smooth powder.
STEP 2  Grind Shallots, Tomato, Green chilly, Ginger, Garlic blend it coarsely( Do not make fine paste).
STEP 3  Use heavy bottomed pan to heat Oil and Ghee. Add blended masala  and sauté it till oil comes out. approximately 7 to 10 minutes, until raw smell comes out.

STEP 4  Add Coriander powder, chilly powder, biriyani masala, sauté it for minute.

STEP 5  Add vegetables, curd, coriander leaves, mint leaves, and salt. Let it cook for 5 to 6 minutes. Make sure vegetable are 80% cooked.

        
STEP; 6  Add 4.5 cup of water, let it boil, check salt, water should be little bit salty. In medium flame add rice, close the lid, cook it for 15 minutes. Make sure rice is 80% cooked. Leave it


dum for 30 minutes. 

          
  
Ready to serve

Note - 
 Oil will get absorb in each steps.
Blend the onion paste coarsely. don't make fine paste
Sauté the masala  till the color change.

   Kari dosa or  mutton keema dosa, Madurai kari dosai is famous in Madurai, a city in the state of Tamil Nadu. Made with mutton keema and mixed spices. We can also make semi mutton gravy and use it as topping which will gives more flavor for the dosai. Kari dosa is served with coconut chutney.  Ingredients for kari dosai Mutton boneless - 200 gram Ginger garlic paste 1 teaspoon. Onion - 1 no's medium sized Tomato - 1 medium sized. Red chilli powder - ½ teaspoon  Coriander Powder ½ teaspoon Turmeric powder - ¼ teaspoon Garam masala - ½ teaspoon Salt Oil - 2 tablespoon. Curry leaves - 1 bunch. Red chillies - 2 Preparation In the cooker, add red Chilli, Cumin seeds, Curry leaves let it sizzle. Add onion, sauté it, until it becomes translucent.
