Gingerbread cookies

New to hear! These are ginger flavored yummy cookies, and can be easily made at home.As the Christmas celebrations have started , we might be looking for different recipes .Though these cookies involve quite a long process but its really worth the try.. This cookies are mostly famous to be made during Christmas holidays, so you can include children in the process of making. This will definitely make their cheeks fall. Preparing needs simple ingredients that are easily available at our kitchen countertop. Instead of opting for packed stuff outside, you can try this at home and serve your children as mid meal snacks. 




Ingredients 

All-purpose flour - 2.5 cup

Molasses syrup -3/4 cup (can be made at home, steps to prepare are given)

brown sugar - 1/2 cup

Egg - 1

Room temperature butter - 1/2 cup

Ginger powder - 1 tablespoon

Cinnamon powder - half teaspoon

nutmeg powder - 1/2 teaspoon

Baking powder - 1 teaspoon

Preparation

  1. Take some butter in a bowl, beat it to creamy using a hand beater or stand mixer.

  2. Then add   brown sugar, molasses syrup and heat it on medium flame.

  3. Take a separate bowl, whisk the all purpose flour, baking soda, salt, ginger powder, cinnamon powder, nutmeg powder together.

  4.  Combine these both  liquid dry mixture well. blend it using a hand beater.

  5. Then gently knead it using your hand ,the  dough will be in a sticky consistency. It is the required state .

  6. Separate the dough into 2 portions, wrap each half with cling wrap. Refrigerate these for an hour.

  7. After refrigeration, the dough becomes firm, place the dough on a parchment sheet or floured surface,

  8. sprinkle some flour in a rolling pin and flatten the dough. We can cut dough into desired shapes with a cookie cutter or we can make circle shapes.

  9. Preheat the oven 365 degrees, bake the cookies for 10 to 12 minutes.

How to make molasses syrup? here we go...

Ingredients needed

1 cup of brown sugar

1 teaspoon cornstarch

1 teaspoon lemon

How to make

In a saucepan, add the sugar, let it melts, then add 1/2 cup of water. 

Let it boil, then add a teaspoon of cornstarch,  mixing it continuously, it helps the sugar syrup to thicken.

Finally, 1 teaspoon of lemon juice, boil it on low heat, the consistency will be like honey.

Mutton minced dosa / Madurai Kari dosai

   Kari dosa or  mutton keema dosa, Madurai kari dosai is famous in Madurai, a city in the state of Tamil Nadu. Made with mutton keema and mixed spices. We can also make semi mutton gravy and use it as topping which will gives more flavor for the dosai. Kari dosa is served with coconut chutney.  Ingredients for kari dosai Mutton boneless - 200 gram Ginger garlic paste 1 teaspoon. Onion - 1 no's medium sized Tomato - 1 medium sized. Red chilli powder - ½ teaspoon  Coriander Powder ½ teaspoon Turmeric powder - ¼ teaspoon Garam masala - ½ teaspoon Salt Oil - 2 tablespoon. Curry leaves - 1 bunch. Red chillies - 2 Preparation In the cooker, add red Chilli, Cumin seeds, Curry leaves let it sizzle. Add onion, sauté it, until it becomes translucent. Add ginger garlic paste and sauté it until raw smell comes out. Add finely chopped tomato and sauté for 2 minutes.  Add all masala one by one and mutton pieces. Mix it well.
