Plum cake /Christmas Fruit cake

HOMEMADE PLUM CAKE

Bored of ordinary cakes?  Like to crave something different yet simple?. Here is the Instant Plum cake recipe for you. Traditionally plum cake is made using Rum. It's a long process which involves soaking in rum for a month. But now we will see how to make an instant one.   Plum cakes are generally filled with various kinds of  dried fruits and nut. which could be felt in the mouth at each bite. Those bites of crunchy stuff inside the cake are not only  heavenly but healthy. Try this once at home and serve them as snacks. It will definitely add on to your favorite snacks list.




 

Plum cake ingredients

All-purpose flour - 1 and 1/2 cup (1.5 cup)

Baking powder - 1 teaspoon

Baking soda - 1/2 teaspoon

Raisins - 1/2 cup (100 gm)

Cashew nuts- 1/4 cup

Almonds- 1/4 cup

Dates - 1/4 cup

Eggs - 3

Cinnamon - ½ Inch

Cardamom - 1

Cloves - 1

Sugar - 1 cup (1/2 cup for caramelizing)

Oil - 150 ml


Substitution

You can use 1/2 cup curd instead of eggs.

You also can use 1/2 cup melted butter instead of oil. (but cake gets relatively dry)



INSTRUCTIONS

To grind

Take1/2 cup of sugar, cinnamon , cardamom, and cloves, blend it into a fine powder.


For caramel syrup

  1. In a saucepan, take 1/2 cup of sugar, keep it on medium flame.

  2. Stir  until it turns honey color ,when the bubbles come out, turn off the heat and pour 1 and 1/2 cup of hot water into the syrup (carefully it will start to splutter). do not let them burn..

  3. The sugar will harden. then turn on the heat again, bring it to boil until the sugar melts. Then add dry fruits and nuts. Let them boil for 5 minutes, soak the nuts and dry fruits in the syrup for 30 minutes.


Substitution 


You can soak the dry fruits and nuts in apple juice, orange juice or grape juice for a minimum of 5 hours. For traditional cakes, as I said earlier  they are soaked in rum for 1 month.


Method

  1. In a mixing bowl ,take eggs and whisk it well. Add oil, vanilla essence while whisking. 

  2. Once they are combined well, add powdered sugar with spices, mix them with spatula.

  3. Sieve the all-purpose flour, baking soda, baking powder, mix it well using cut and fold method without forming lumps.

  4. Finally add soaked nuts and fruits in caramelized sugar. Mix well with spatula.

  5. Bake at 350-degree Fahrenheit for 45 minutes.  Insert a toothpick or any sharp one like a knife to check if it is well baked. If it comes out clean, it's done . if not, bake for some more minutes

Cool it down completely,

For a better taste, enjoy it the next day.
