Vada curry

Hi today's recipes is tasty vada curry.  I have prepared very simple and healthy way , Famous in Chennai. I got this recipe from my friend.


INGREDIENTS

Channa dal - 1/2 cup
Onion - 1 big 
tomato - 1 big
chilly - 3 to 4 based on spice
chilly powder - 1 Teaspoon
Garam masala - 1 teaspoon
Coriander powder - 2 teaspoon
Green chilly - 3 to 4 nos
Bay leaf - 1 nos
Cinnamon - 1 inch
Cardamon - 2 nos
cloves - 3 nos
fennel seeds - 1 teaspoon
oil - 3 tablespoon
 


Preparation

  1. Soak the Bengal gram (channa dal) for minimum 1 hr.
  2. Grind the Bengal gram with fennel seeds and salt, grind this ingredients coarsely.
  3. Make a shape steam it for 10 minutes.
  4. Breakdown into tiny pieces.
Making masala

Heat a oil in a pan,  add bay leaf, cardamon, cloves, cinnamon. saute for seconds.
 And then  add thinly chopped onion(julienne cut). To get glass stage. Add salt.
 
To add tomato smash it, then add coriander powder, chilly powder,green chilly, garam masala. saute this in mid flame for a seconds.
 

then add small amount of water, saute until the raw smell goes out.
 

after add more water cook it until oils comes out. Which is important step for vada curry.


Once water get boiled, Add steamed vada and cook it for 5 min. 
Finally add 1 spoon of ghee and chopped coriander.








vada curry is ready
serve this with idly and dosa

Mutton minced dosa / Madurai Kari dosai

   Kari dosa or  mutton keema dosa, Madurai kari dosai is famous in Madurai, a city in the state of Tamil Nadu. Made with mutton keema and mixed spices. We can also make semi mutton gravy and use it as topping which will gives more flavor for the dosai. Kari dosa is served with coconut chutney.  Ingredients for kari dosai Mutton boneless - 200 gram Ginger garlic paste 1 teaspoon. Onion - 1 no's medium sized Tomato - 1 medium sized. Red chilli powder - ½ teaspoon  Coriander Powder ½ teaspoon Turmeric powder - ¼ teaspoon Garam masala - ½ teaspoon Salt Oil - 2 tablespoon. Curry leaves - 1 bunch. Red chillies - 2 Preparation In the cooker, add red Chilli, Cumin seeds, Curry leaves let it sizzle. Add onion, sauté it, until it becomes translucent. Add ginger garlic paste and sauté it until raw smell comes out. Add finely chopped tomato and sauté for 2 minutes.  Add all masala one by one and mutton pieces. Mix it well.
