Kothu chapathi recipe

Kothu chapathi is a very simple recipe, can do this with left over chapathis. It takes around 15 minutes to prepare. There are 2 methods to make this recipe.



Method 1

Ingredients

Chapatti - 5 
Egg - 3 
Onion - 100 gm (1 medium  size)
Tomato - 100 gm (1 medium size)
Fennel seeds - 1/2 teaspoon
Chilly powder - 1 teaspoon
Ginger garlic paste - 1 teaspoon
Coriander powder - 1 teaspoon
Cumin powder - 1/2 teaspoon
Garam masala - 1/2 teaspoon
Curry masala - 1/2 teaspoon(optional)
Pepper - pinch
Salt - as required (1/2 teaspoon)
Curry leaves - 12 nos
Coriander - hand full (1/2 cup)
Oil - 2 tablespoon

Preparation

Take chapathis, shred it into tiny pieces. keep aside.


Heat oil in a pan, add fennel seeds sizzle it. add onion and curry leaves. fry it for few minutes. '
Add crushed ginger garlic. saute for few minutes.

Add tomato. saute for some minutes. ( you can also add capsicum, peas and carrot) .

Add chilly powder, coriander powder, cumin powder, garam masala and salt. saute it well in medium flame. until it gets into gravy consistency.

Then add eggs, pinch of salt and pepper. Cook it partially.

Then add chapathis. mix it well. saute for 4 to 5 minutes.

Add 1/2 teaspoon of lemon juice( optional).
Finally garnish with coriander and curry leaves.

Method 2


Ingredients

Chapathis  - 5 nos
Egg - 2 nos
Onion - 100 gm
Chilly  powder- 1/2 teaspoon
Tomato sauce - 1 teaspoon
 Curry leaves - 12 nos
Coriander leaves - hand full   
Left over kurma or curry  - 1/2 cup
Salt as required

Preparation

Take chapathis cut into the tiny pieces. keep aside.
Heat oil in kadai, add onion and curry leaves saute for few minutes do not burn it.

Add chilly powder saute it well.

Add chilly powder

Then add eggs with pinch of salt and pepper. mix it well cook it partially.

Add finely chopped chapaties  and 1 teaspoon tomato sauce (optional) saute it.

Finally add left over kurma or curry and coriander leaves. saute for 2 to 3 minutes.

Add kurma or gravy

kothu chapathi is ready.
