Watalappam (Coconut custard pudding) recipe

Watalappam another name vattalappam is a coconut custard egg pudding. It is a traditional Srilankan  dessert recipe. It is also famous in down south of Tamilnadu. Made with coconut, sugar or jaggery, eggs and nuts. Ramadan special, we will make this recipe often for the ifthar time. Vattalappam is a delicious yet healthy recipe. Try this recipe, you will never stop.

INGREDIENTS FOR VATTALAPPAM

Coconut milk - 3/4 cup ( Half portion of coconut)
Eggs - 4 
Cardamom - 3
Sugar - 3/4 cup
Cashew - 3 to 4
Almond - 3
Pistachio - 3
Coconut - Small piece
Roasted gram ( pottu kadai) - 1/2 teaspoon
Ghee - 1 teaspoon

Preparation

To grind paste

STEP 1
Soak cashew, almond, and pistachio (you can also use any kind of nuts). For easy grinding use cashew, roasted gram and small piece of coconut to make a paste.
In blender jar, add coconut, roasted gram and soaked nuts, make into paste. 









STEP 2
Blend sugar and cardamom into powder. 
In same jar add eggs, blend it well until it gets frothy.


 STEP4
Add coconut milk (Coconut milk should be very thick, so use first milk, do not use remaining milk). blend it well.

STEP 5
Add ground paste. Blend this paste thoroughly with coconut milk, eggs,.... mixture.


STEP 6
Greese the bowl with ghee, filter the mixture into the bowl.

     







STEP 7
Keep in   tightly closed vessel in inside a steamer like idly pot cook it for 40 minutes. or 
 In pressure cooker, fix the stand in cooker. Add small amount of water. Keep the bowl in the cooker. Cover with plate  Leave it to 5 to 6 whistle.





Insert knife then check whether knife comes out clean.
For tempering 
Heat some ghee, add cashew, sizzle it for few seconds. pour  on the watalappam.
Delicious Watalappam is ready.

Moong dal dosa

Moong dal dosa Ingredients: Moong dal: 1 cup Red chilli: 2 Garlic: 1 clove Fennel seed: 1 teaspoon Tomato: small piece Salt: as required Oil: as needed Preparation Soak the moong dal in water for two hours. Grind the batter. Drain the water and grind the dal with garlic, red chili, fennel seeds, tomato, and salt. Add water to achieve a smooth batter. The consistency should be neither too thick nor too thin. Fermentation is not required. Allow it to rest for 15 minutes. Prepare the dosa. Heat a cast iron or any dosa pan, add a few drops of oil, and rub the pan with an onion slice or tissue paper. Pour a ladle of batter and spread it in a circular motion to form a thin dosa. (Dosa tawa should be medium heat). Drizzle a few drops of oil or ghee. Cook until the top is golden and crisp. If desired, add toppings such as onion, coriander leaves, and curry leaves.
