Shrimp biriyani

 Shrimp biriyani is the one of the delicious biriyani.  This biriyani is for all sea food lovers. it will takes a time minimum 30 minutes. 



Ingredients

Jeeraga samba rice - 1.5 cup
Shrimp - 1 cup
Tomato -  1 big
Onion - 100 gm 2 big
Ginger garlic paste 2.5 teaspoon
Bay leaves - 1
Star anis - 1
Cinnamon - 1 inch
Cardamom - 5 to 6
Cloves - 5 to 6
Cashew - 5
Red chilly powder - 1 teaspoon adjust your spice level
Coriander powder - 1 teaspoon
Biriyani masala - 1/2 teaspoon
Coriander leaves - 1 cup
Mint leaves - 3/4 cup
Curd - 1/4 cup
Salt per taste

Biriyani masala

Cinnamon - 1/4 cup
Cardamom - 1/4 cup
Cloves       - 1/4 cup

Shrimp margination

Marinate the shrimp with 1/2 teaspoon of chilly powder, 1/2 teaspoon turmeric powder, ginger garlic paste 1 teaspoon and salt.
Marinate  for 30 minutes

Preparation

 STEP 1; In heavy vessel, add 1/3 cup of oil, add all whole garam masala, add shrimp fry it for 2 minutes.
 STEP 2;  Add sliced onion. sauté it till get transparent. No need to brown stage.  add ginger garlic paste sauté it, 
 STEP 3;  Add coriander leaves and mint leaves, sauté for 2 minutes.
 STEP 4;  Add tomato and curd mix it . cook until tomato get mushy.
 STEP 5;  Add 1 teaspoon of chilly powder. coriander powder 1 teaspoon, biriyani masala 1/2 teaspoon.
                Mix it well. let oil comes out.
 STEP 6;  Add 3 cup of water leave it to boil. check the salt.
 STEP 7;  Finally add the rice. Let cook the rice get 80% done. Squize half lemon juice
                Then dum it for 20 to 30 minutes.

Moong dal dosa

Moong dal dosa Ingredients: Moong dal: 1 cup Red chilli: 2 Garlic: 1 clove Fennel seed: 1 teaspoon Tomato: small piece Salt: as required Oil: as needed Preparation Soak the moong dal in water for two hours. Grind the batter. Drain the water and grind the dal with garlic, red chili, fennel seeds, tomato, and salt. Add water to achieve a smooth batter. The consistency should be neither too thick nor too thin. Fermentation is not required. Allow it to rest for 15 minutes. Prepare the dosa. Heat a cast iron or any dosa pan, add a few drops of oil, and rub the pan with an onion slice or tissue paper. Pour a ladle of batter and spread it in a circular motion to form a thin dosa. (Dosa tawa should be medium heat). Drizzle a few drops of oil or ghee. Cook until the top is golden and crisp. If desired, add toppings such as onion, coriander leaves, and curry leaves. Serve with coconut and tomato chutney.
