Palak paneer/ Spinach cottage cheese curry

 Palak paneer is one of the famous recipe in Punjab cuisine, Palak means Spinach, paneer means Indian cottage Cheese. Let's make a healthy, creamy, tasty Spinach gravy. We can serve with naan, paratha, chapathi and jeera rice.



Ingredients

Paneer -  250 gram

Spinach - 4 cups

Onion - 1 medium sized

Tomato - 1 medium sized

Ginger garlic - 1 teaspoon

Chilli powder - 1 teaspoon

Coriander powder - 1/2 teaspoon

Turmeric - 1/4 teaspoon

Garam masala - 1/2 teaspoon

Fenugreek leaves - 1 teaspoon

Fresh cream - 1/4 cup

Salt to taste 

Butter - 1 tablespoon

Preparation

STEP 1: Blanch the spinach leaves for 1 to 2 minutes until  turns wilted ( I used baby spinach) Make it a puree and keep it aside.

Tips - To retain the green color of spinach you can pour cold water



STEP 2: Heat the oil in medium flame, Then add cumin seeds, finely chopped onion, chopped ginger and garlic. Sauté for a few minutes until it changes color.



STEP 3:  Add  finely chopped tomato. After a few minutes add chilli powder, turmeric powder, garam masala, sauté it, leave it until oil oozes, sauté it often.



STEP 4; Add spinach puree and 1/2 cup of water, cook it for 10 minutes,  sauté it foin a regular interval. 


STEP 5: Once the spinach is cooked, add fresh cream then mix. Add paneer and cook it for 2 minutes. 

If you need more flavor, saute the paneer and chilli powder in butter for 2 minutes.



STEP 6: Finally add some fenugreek leaves.

Mutton minced dosa / Madurai Kari dosai

   Kari dosa or  mutton keema dosa, Madurai kari dosai is famous in Madurai, a city in the state of Tamil Nadu. Made with mutton keema and mixed spices. We can also make semi mutton gravy and use it as topping which will gives more flavor for the dosai. Kari dosa is served with coconut chutney.  Ingredients for kari dosai Mutton boneless - 200 gram Ginger garlic paste 1 teaspoon. Onion - 1 no's medium sized Tomato - 1 medium sized. Red chillies - 2 Preparation In the cooker, add red Chilli, Cumin seeds, Curry leaves let it sizzle. Add onion, sauté it, until it becomes translucent.
