Noodles recipe 


Ingredients 


Noodles - 500 gram

Tomato - 2 medium sized

Minced garlic - 1 tablespoon

Olive oil -2 tablespoons

Kashmiri chilli - 7 to 10

Curry masala(any) - 1 tablespoon

Soy sauce - 1 tablespoon

salt

Capsicum - ½ cup 

Cabbage - ½ cup

Green peas - ½ cup

Carrot - ¼ cup

Spring onion


Optional add - ins

We can replace minced meat, boneless chicken, shrimp, instead of vegetables. Or we add meat along with vegetables for non veg version

Tomato puree

Boil: In a saucepan, boil 2 large tomatoes and 10 kashmiri chillies for 10 minutes until skins start to peel.

Blend: Drain, let them cool completely, then blend into a smooth paste. Set aside.



Noodles

Cook noodles: Boil noodles in salted water until al dente. Drain, rinse with cold water, and toss with a little oil. Set aside.

Cook puree:  Add minced garlic saute until golden. Add the tomato puree . Cook on medium for 4-5 minutes until thickened and most water evaporates. Stir often. Add curry masala Stir until raw smell comes out.

Add veggies: Toss in 1 cup mixed chopped vegetables. Stir fry 2-3 minutes until partially cooked but still crisp. Dont overcook.

Season: Add 1 tablespoon soya sauce and salt to taste.

Combine: Add cooked noodles. Toss on high heat for 1 to 2 minutes until well coated.

Garnish and serve: Mix in chopped spring onions and a squeeze of fresh lemon juice.

Serve hot with a fried egg on top.
